What do you do for quick and easy snacks and meals on the go? I know that we all have life hacks we use for keeping our kids fed, hydrated, clothed and entertained in the midst of our busy lives, and I am about to share one of my favorite meal hacks with you. Like my readers, I am constantly on the go with my kids and family. We have school, sports, two or three Taekwondo classes a week, and visits to friends and relatives. Sometimes we are only home long enough to dump the gear from one activity and pick up equipment for another, or to sleep. So how do you make sure that you kids get the healthy meals and snacks that they need in order to stay fueled up, healthy and energized? You plan ahead, and you keep Yoplait® yogurt on hand to add flavor and fun to snacks and meals.
The most important step in making sure that you feed your family healthy prepared meals and snacks is to PLAN AHEAD! If you don’t plan ahead, you find yourself in yet another drive-through spending money you don’t want to spend to feed your kids food that you don’t want them to eat. So come up with a plan, make sure that you have ingredients you need, and use whatever hacks you can to make the whole process easier. For instance, I make sure that I always have fresh veggies on-hand, and as soon as I get home from the store I chop them up and put them in their own containers. If the vegetables aren’t cut up and ready to eat, sometimes they end up going bad because the kids won’t pick them up to eat them. In addition to the handiness for snacks, having vegetable pre-cut makes such a difference in quick meal prep.
The latest favorite quick meal hack at our house is the Two Minute Dinner Wrap. It could not be simpler. I mix up a dressing using the ingredients below – and incidentally the girls love to dip veggies into the dressing with their snacks. I keep a bottle on-hand (it lasts for about a week) and when we are in a rush, I pull out a wrap, spread the dressing on it, and add whatever veggies the girls feel like having. We roll it up, wrap it in a paper towel, and we are ready for the car and our next adventure. I use plain Yoplait® yogurt, but I think it could be delicious with any of their other flavors. The yogurt gives the dressing a bit of a zing, and it thickens it up so that it stays on the wrap where it belongs and doesn’t drip everywhere. I used Yoplait® Original, but it would be tasty with Yoplait® Greek or Yoplait® Light. You can get any of these varieties, along with Gogurt®, in any of the tasty Yoplait® flavors at Walmart, and stop stressing about making a healthy dinner on the go.
8 ounces of Yoplait® Yogurt (plain or Greek)
2 teaspoons Lemon Juice
1 teaspoon Mustard
1 teaspoon Chopped Thyme
1 teaspoon Chopped Chives
(Whatever else you may like in a wrap)
In a blender, Magic Bullet or small bowl, combine the ingredients until smooth.
Spread dressing over tortilla.
Place Spinach on tortilla wrap and enjoy.
