Buttermilk Bacon Pancake Recipe #sundaysupper #bacon #pancakes


Oh My Gosh this is so good. I saw this picture and laughed ….. then I thought – Hell! Why Not!
I have included the Buttermilk Pancake recipe we use at camp, BUT in all seriousness Bisquick Shake and Pour with pre-cooked microwave bacon is perfect for camping, a quick breakfast or Friday night dinner and a movie with the kids!

Pound or so of bacon
3 cups all-purpose flour
3 tablespoons white sugar
3 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted

Directions”
Cook bacon according to instructions on the package.

Set bacon aside – Clean griddle.

Buttermilk pancake mix:
Beat together buttermilk, milk, eggs and melted butter.
In a separate bowl, combine flour, sugar, baking powder, baking soda, and salt.
Keep the two separate until you are ready to cook.
Heat a lightly oiled griddle over medium high heat.
Once the griddle is hot again, combine the content of both bowls into the largest bowl and blend together. Stir until it’s just blended together. Do not over stir!
Pour the batter into a large measuring cup to make it easier to pour onto the bacon.

Cooking:
One at a time, pour a strip of batter the length of your bacon
Lay bacon strip on top of batter
Cover top of bacon with a little more batter
Repeat across the griddle making one Buttermilk Bacon Pancake at a time
Brown on both sides and serve hot.

For best results attempt to get bacon with the least amount of fat – like that’s possible.
Bacon grease splatters – wear protective clothing.
Clean griddle between bacon and Buttermilk Bacon Pancake – however if you don‘t clean the griddle WOW! Good.
