This Stuffed Cookie recipe comes from my non-blogger friend Raina – a genius in the kitchen. When I saw her picture of the Stuffed Cookie Sandwiches on FaceBook I asked if I could have the recipe for a post – her response was “with measurements?”

So this is what she came up with – your results may very.

Ingredients:
1 Duncan Hines Classic Dark Chocolate Fudge Cake Mix
2 cups confectionery sugar,
1 package Dream Whip,
1/3 cup brown sugar,
2 tsp vanilla,
4 tbsp butter,
1/4 cup milk,
1/3 cup of mini chocolate chips.

Raina tells me she use any cake mix with 2 eggs & 1/3 cup of oil – mix per the directions on the box. For this one she used Duncan Hines Classic Dark Chocolate Fudge Cake Mix.

Roll the batter in small balls.
Cook on a silpat @ 350 for 8 minutes (or until cooked through).

The Filling: Combine everything but the cake mix in a large bow.

Spread the filling on to the flat side of a cookie and top with another cookie – Voilà a Stuffed Cookie Sandwich!
